
High-protein chocolate cake

Ingredients
For the chocolate cake:
- 3 medium eggs (2 egg whites, 1 whole egg)
- 4 tablespoons sugar-free apple sauce
- 100 ml almond milk, or cow's milk
- 200 gram cake flour
- 125 gram chocolate
- 85 gram baking cocoa
- 1 tablespoon baking powder
For the icing:
- 200 grams low-fat cream cheese
- 20 grams chocolate BlueLab® 100% Whey Protein
- 1 tablespoon baking cocoa
Instructions
- Preheat oven to 175°C.
- Beat two egg whites until stiff. Whisk 1 whole egg with applesauce and almond milk.
- Mix flour, protein powder, cocoa and baking powder.
- Add wet ingredients and mix briefly but vigorously to form a homogeneous dough. Fold in beaten egg whites.
- Pour dough into a small silicone mould and smooth out.
- Bake the chocolate cake for about 17 minutes - not too long, otherwise, it will be dry.
- Let the high-protein chocolate cake cool. Then decorate with frosting.
- To do this, mix the cream cheese with protein powder and cocoa and spread it on the cake. Decorate with berries as desired.
